Inspired by these beautiful summer months, I opted to make some cupcakes influenced by a popular summery beverage: a Piña Colada! I started with a simple white cake and proceeded to add fresh, crushed pineapple to the batter. I also added shredded coconut and a few splashes of Malibu Coconut Rum. For the topping, I started with a simple buttercream icing that I dyed a soft yellow. I also added a few rum splashes and some juice from the pineapple to the icing, but not too much... I didn't want runny, liquidy icing! After I frosted the cupcakes, I garnished them with a few coconut shavings and a cherry on top. Happy summer!
